Why are the lists of ingredients on processed food so long?  Well, they need preservatives for long shelf life, artificial colors because colors of fresh food fade over time, artificial flavors because fake food doesn't taste like real food, vitamins, minerals, and fiber added to replace what was stripped out in processing, sugar to excite your taste buds for this not so exciting food, and even additives to use up cheap surplus ingredients. 

MSG is a well known additive to enhance flavor in foods--again, because the "food" doesn't have good flavor on its own.  But it can have devastating health effects.  See the following quote.

Read the list of ingredients on all the food you buy.  If there are ingredients you can't identify, think about why you are eating them and what they might do to your health and that of your family.  Then think about why they don't have to list ingredients in fresh whole foods.  A banana is just-a banana.  Rice is just rice.
